Hey y'all!
Happy Friday! Today I wanted to share a little cooking post with y'all because life has slowed down just enough to where I was really wanting to do a little baking and finally had the time to do it. Of course with the onset of fall -- I love baking yummy treats and of course all things pumpkin! I usually am a pretty serious health enthusiast but I also love a good baked treat. I was also thinking of sharing food favorites or recipes and starting a little series on here if y'all would be interested in that!
I thought I would start of simply because that's the best place to start right?! This recipe is something that my mom would make a lot so it just reminds me of her! And its seriously so yummy but only requires three ingredients. Is there anything better than that?
For this, you will need:
1 box of spiced cake mix
1 can of pumpkin
1 package of baking chips
& that's literally it y'all!
This recipe originally called for cinnamon chips. However, every time my mom and I would go to make them, it was a wild goose chase to find cinnamon chips! I went to every grocery store in town and couldn't find them. However, this recipe would honestly be so good with any kind of baking chips. I used semi-sweet chocolate, but white chocolate, dark chocolate, really anything would be good I can imagine! And if you aren't a chocolate person or want less of a sweet treat, you could do dried cranberries and walnuts which would also be so yummy and fall-ish!

Basically all you have to do is mix the pumpkin and the spice cake together and then fold in your chips or extras of choice. Then just throw it in a bundt cake pan and bake for 40-45 minutes. I just watch it because they tend to take longer in a bundt pan, but I know the oven at my house is way less reliable than the one in my mom's kitchen!
To finish it off, you could easily whip together a little glaze to drizzle over the top, but I usually just dust a little powdered sugar on the top of the cake! It is so moist and sweet by itself that I find it doesn't really need much frosting :)

I am such a sucker for this color for the fall time, and I adore ponchos and chunky knits too. I paired it with my fav black ripped jeans and a striped tee for layers! All of these pieces are under $40 so definitely worth stocking up on for your fall wardrobe :)
